You take only one major course per phase, allowing you to concentrate your efforts and get the most from the material presented.

You will spend 100% of your time studying within your chosen field. The philosophy of L’Ecole Culinaire is you ‘do it’ rather than read about it, meaning that you directly employ your expertise on a daily basis. You will further this in a 10-week internship within one of St. Louis’ finest food service facilities. Diploma

Culinary Essentials is a 60-week program that helps students achieve employment as an assistant, apprentice, station chef, line cook, short order cook, or any other culinary venture. You will be introduced to culinary terms and writing while learning the fundamentals of cooking and baking. You will also familiarize yourself with communication, team dynamics, and customer service, along with other essential business skills. The Culinary Arts program is 90 weeks and builds on the skills acquired in the Culinary Essentials program. You will perfect your own culinary techniques through extensive lab exposure. You specifically study areas such as baking and pastry, management and operations, professional presentation, international cuisine, and contemporary, artistic, and healthful cuisine.
