The Culinary Arts program at Oregon Culinary Institute allows you to fulfill your passion and burning desire to become a culinary professional. Whether you take the 32-week diploma or 62-week degree program, you will learn the essentials of working in a commercial kitchen through a focused, practical curriculum. You will solely focus on what restaurant owners and executive chefs require from their new staff members. Possessing relevant and current workplace skills will help you find employment you desire immediately after graduation.
The Culinary Arts program begins by teaching the basic fundamentals of cooking. This section will focus on skilled knife handling, along with creating stocks and soups. You will then progress to basic and intermediate cuisine where you will create appetizers, desserts, and hot entrees. The third stage of the program is advanced cuisine and restaurant practical. This is where you will bring all learned skills to an elite level. You will work in the on-site restaurant and interact with customers. You will bring together all aspects of restaurant operations, including menu development and cost control.
As a final portion of the Culinary Arts program, you will complete an externship before graduation. This is a position within a restaurant or other culinary institute located in the community. An externship is highly valuable, as it offers you real world work experience before you even begin your job search. Completing an externship allows you to develop work habits and strengthen skills that are conducive to running a successful kitchen.
